This quick and easy recipe is perfect with a side of corn and oven-crisp potatoes!
Ingredients:
1/4 cup flour (e.g., all-purpose, whole wheat, oat)
1/4 cup non-dairy milk (e.g., oat, soy, cashew)
1/4 teaspoon salt
1 10 oz package vegan mock chicken strips (e.g., Gardein)
1 bottle vegan BBQ sauce (Trader Joes, Sprouts, or your favorite brand--beware of honey or natural flavoring contained in some brands)
Directions:
In large bow, combine flour, salt, and non-dairy milk until smooth. Add mock chicken strips and toss until coated. Warm a saute pan. Coat bottom of pan with oil to prevent sticking. Press four to five strips together into a lump. The batter will serve as "glue" to hold strips together. Cook lumps in medium-hot pan until golden. While in pan, smother each piece with BBQ sauce and continue cooking until thick and slightly caramelized.
