Chicken Salad

This recipe is heart-healthy, diabetes friendly, vegan and absolutely delicious. Use it for sandwiches, salads, or a tasty side.

Equipment

  • 1 food processor (optional)
  • 1 measuring cup (1 cup size)
  • 1 teaspoon
  • 1 bowl (medium size)
  • 1 sharp knife

Ingredients

  • 1 package Gardein mock chicken strips, 10 oz. (or vegan equivalent)
  • 1 cup celery, diced
  • 1 cup Vegenaise (Follow Your Heart or vegan equivalent)
  • 1/2 tsp salt (to taste, optional)
  • Your favorite sandwich bread (sour dough, rye, whole grain, hoagie, pita, lavash flat bread, flour tortilla). Lightly toasted works well
  • Sliced tomato, onion, pickle, lettuce (optional)

Instructions

  • Pulse mock chicken strips very lightly in processor to ¼ to ½ inch pieces. Transfer to medium sized bowl. Take care to not over-process. If food processor is not available, dice mock chicken with a sharp knife.
    1 package Gardein mock chicken strips, 10 oz.
  • Add vegan mayo and diced celery. Mix well and then add salt (optional) to taste.
    1 cup celery, diced, 1 cup Vegenaise, 1/2 tsp salt
  • Add a rounded 4 oz. scoop to your favorite bread with sliced tomatoes, lettuce, onion slices, and dill pickle slices, or serve scooped atop a salad or on a lettuce leaf as a side.

Notes

Gardein Chicken Strips are available at Walmart, Safeway and many other stores, as well as on-line. Unseasoned works best. Other brands are available as well.
